Macro Friendly White Chocolate Blueberry Protein Muffins

I’m a sucker for a fresh blueberry muffin right out of the oven. The sweetness of the muffin mixed with the tartness of the fresh blueberries just does something for me.

If you’ve been with me for a while then you know that I love to play around with protein powder. Ever since I started counting macros (proteins, carbs and fats) and understanding the importance of proper protein intake, I am always looking for ways to sneak it in. 

So when I was craving blueberry muffins the other day, I knew just what to do! These high-protein white chocolate blueberry muffins are an amazing snack or breakfast food and a sneaky way to up your daily protein intake.

3 Reasons Why You Will Love Our Macro-Friendly White Chocolate Blueberry Protein Muffins Recipe

  1. These blueberry muffins taste just as good as the classic recipe, but better because they contain 7g of protein per serving and include white chocolate chips for extra sweetness and fun.
  2. Making these muffins is simple and completely hassle-free. All you need is one mixing bowl and a muffin tin. Nothing fancy, nothing complicated.
  3. They are great for meal prep. Make a batch of white chocolate blueberry muffins on a Sunday and enjoy them as a snack or with your breakfast all week long. Bonus: they freeze well, too!

Ingredients

  • Vanilla protein powder – I used 1st Phorm Level-1
  • Baking powder
  • Salt
  • Cinnamon
  • Egg whites
  • Plain Greek yogurt
  • Unsweetened applesauce
  • Vanilla extract
  • Lite maple syrup
  • Blueberries
  • White chocolate chips

Kitchen Tools Required

  • Large mixing bowl
  • Mixing spoon
  • Measuring cups
  • Cupcake tin – I love mine from Caraway Home

How to Make White Chocolate Blueberry Protein Muffins

  1. Preheat oven to 375.
  2. In large mixing bowl combine all wet ingredients.
  3. Add all dry ingredients to the wet ingredients and stir until well combined.
  4. Fold in blueberries and white chocolate chips, stirring gently to avoid breaking the blueberries.
  5. Scoop by tablespoon into greased muffin tin and bake for 13-15 minutes. 
  6. Remove from the oven, allow to cool, and enjoy!

Swaps or Alternatives

Protein powder – I used a whey protein powder, however, you can easily swap it for a plant-based protein. I like KOS vanilla protein and Ritual’s vanilla protein powder for plant-based options.

Greek yogurt – I used plain greek yogurt, but swapping for a vanilla-flavored greek yogurt will add a tad more flavor.

Egg whites – You can use a whole egg in place of the egg whites if you want to increase the fat content.

Blueberries – If you don’t have blueberries or they aren’t your favorite, you can substitute them for your favorite berry! Raspberries and blackberries work best.

Quick Tip

If your muffin batter looks too runny, add in some more flour or protein powder to give it a thicker consistency. A super runny batter can result in wet muffins.

Notes

If your batter is runny, add more flour or protein powder to bulk it up a bit and avoid soggy muffins.
