- 1 Mixing bowl
- 1 Mixing spoon
Ingredients
- 1 cup whole wheat flour
- ¾ cup pumpkin protein powder (I used 1st Phorm Level-1 in Pumpkin Spice Latter Flavor)
- ½ cup light brown sugar
- 1 tsp Baking soda
- 1 tsp vanilla extract
- ½ cup unsweetened applesauce
- 1½ cups pumpkin puree
- 1 large egg
- ¾ cup mini chocolate chips
Instructions
- Preheat your oven to 350°F and line a muffin tin with muffin liners or lightly grease the tin.
- In a mixing bowl, combine the dry ingredients: flour, brown sugar, protein powder, baking soda, and chocolate chips. Stir until well mixed.
- Add the egg,vanilla extract, applesauce, and pumpkin puree. Mix well.
- Fold in mini chocolate chips.
- Spoon the batter into the prepared muffin tin, filling each cup on the full side of ¾ full.
- Place the muffin tin in the preheated oven and bake for about 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs.
- Once baked, remove the muffin tin from the oven and allow the muffins to cool in the tin for a few minutes. Then transfer them to a cooling rack to cool completely.

Notes
The batter will be quite thick due to the pureed pumpkin, this is normal and to be expected.
If you want to save calories and make these just a protein pumpkin muffin, omit the chocolate chips.
