3 Reasons Why You Will Love This Macro Friendly Mini No-Bake Berry Cheesecake Recipe

If you are anything like me, dessert is a non-negotiable part of your day.

#1: One of the reasons why I love counting macros so much is because I can easily fit a healthy dessert into my macros and feel zero guilt or shame. You’ll see that the macros in these mini no-bake berry cheesecakes are low in fat, with a good portion of protein to keep you feeling full and satisfied!

#2: These cheesecakes are individually made so you can customize them however you want (see the Swaps or Alternative section for some ideas).

#3: Lastly, this recipe comes together quickly with minimal ingredients but so much flavor! With Valentines Day right around the corner, these are a perfect ending to any Galentines or special dinner!

Ingredients

  • 1 mini graham cracker crust 
  • ¼ c cottage cheese (I like good Culture best)
  • ½ c Greek yogurt (I love Two Good Vanilla for this)
  • 1 tbs. sugar-free cheesecake pudding mix (JELLO brand is great)
  • â…“ c strawberries OR any kind of berries you’d like -fresh or frozen

  • Small bowl
  • Measuring cups
  • Blender or mixer (optional!)

How to Make No-Bake Berry Cheesecake

  1. Add your yogurt, cottage cheese, and cheesecake JELLO mix into your bowl and either stir briskly until well combined, mix into a blender, or whip together using a hand mixer. If you don’t like the texture of cottage cheese, blending your cheesecake mixture will help make it smooth!
  2. Spoon your mixture into a mini cheesecake crust and smooth it out. There should be plenty of cheesecake for it to more than fill your crust.
  3. Top your mini cheesecake with whatever toppings you’d like. We love to use fresh or frozen berries for flavor and fiber, but there are tons of ways to personalize your cheesecake!

Swaps or Alternatives

The fun part about these cheesecakes is that you can make them in whatever flavor you’d like! The base of the greek yogurt and cottage cheese will stay the same, you’ll simply add whatever kind of pudding mix or mix in that you’d like!

Here are some ideas: 

  • Sugar-free chocolate pudding with strawberries on top
  • PB2 powder with chocolate chips on top
  • 2 Tablespoons of pumpkin puree and 1 teaspoon of pumpkin spice
