3 Reasons Why You Will Love This High-Protein Tacos Recipe

  1. It is easily customizable. One of the best parts of this recipe is that you can simply swap out any of the ingredients to make your own. You can simply switch the tortillas, meat, and/or toppings. This recipe is made with meat and cheese, but if you’re wanting a dairy-free or vegetarian option you can easily replace it with your favorite alternative or leave out for a veggie-forward dish.
  2. It is macro-friendly and well-balanced. Traditional tacos either tend to be high in refined carbohydrates or high in saturated fats (or both). These Macro Friendly Classic Tacos use an array of portioned ingredients that create the perfect balance of macronutrients (carbs, protein, and fat). This recipe is so tasty, but will also give you all the nutrients you need to keep you feeling your best!
  3. The taco meat can be batch-cooked and frozen for later use. I am a huge fan of freezer meals and the taco meat in this recipe is the perfect example of this. If you like to have things on hand for nights when you don’t have time to cook, I highly recommend trying to make this taco meat ahead of time and storing it in the freezer. When you want to eat it, simply thaw the meat and create your perfect taco with your favorite tortilla and toppings.

Ingredients

This recipe is full of nutritious ingredients and so much variety! It is easily customizable, but if you are following our traditional recipe you will need:

  • Ground lean beef (or protein of choice)
  • Low-sodium taco seasoning (I used Siete Mild Taco Seasoning)
  • Tortillas of choice (I used Mission Whole Wheat Tortillas)
  • Lettuce
  • Pico de gallo
  • Avocado (or guacamole)
  • Sliced olives
  • Shredded cheese
  • Greek yogurt (or sour cream)

Kitchen Tools Required

For this recipe you will need a large skillet and a large spoon or spatula. That’s it!

How to Make Macro Friendly Pasta Salad

Step 1: Cook meat and add taco seasoning.

Step 2: Prep all other ingredients.

Step 3: Heat tortilla, top with taco meat and toppings of choice. enjoy!

Swaps or Alternatives

  • Lean beef
    • I used 96/4% lean beef for this recipe, but any protein of choice can be used depending on your nutritional needs and food preferences. Other options include ground turkey, ground chicken, or cooked lentils.
  • Taco seasoning
    • If you are looking to lower your sodium intake, I recommend using a low sodium taco seasoning blend or creating your own from scratch. 
  • Tortillas
    • There are an endless amount of options when it comes to tortillas. I used a whole wheat tortilla, but other alternatives include almond flour, cauliflower, egg white, and corn tortillas, just to name a few. If you prefer taco salads instead, you can simply use a lettuce wrap or put the taco meat and toppings on a bed of lettuce.
  • Toppings
    • This recipe calls for lettuce, pico de gallo, avocado, sliced olives, shredded cheese, and Greek yogurt. The great thing about tacos is that they are easily customizable, so you can easily swap out any of the toppings with your favorite taco toppings. 

Quick Tip(s)

  • The taco meat cooks really quickly in this recipe, so I recommend buying toppings that don’t require a lot of prep work (i.e. buying pico de gallo vs tomato, onion, cilantro, etc that you have to chop yourself). This will save you not only time chopping, but also clean up time as well! 
  • Place a slightly damp paper towel on top of the tortillas to ensure they do not dry out while heating.

Equipment

Ingredients
  

  • 1 lb. lean ground beef (I used 96/4%)
  • â…“ cup water
  • 1 packet taco seasoning (I used Siete Mild Taco Seasoning)
  • 8 tortillas of choice (I used Mission Whole Wheat Tortillas)
  • 8 lettuce leaves (I used green leaf lettuce)
  • ½ cup Greek yogurt (I used Fage 2%)
  • ½ cup guacamole (I used Wholly Guacamole)
  • ½ cup pico de gallo
  • ½ cup shredded Mexican cheese
  • ½ cup sliced black olives

Instructions
 

  • In a large skillet, add ground beef. While the meat is cooking, break it up into crumbles. Cook until no longer pink.
  • Add â…“ cup of water to the skillet and 1 pouch of taco seasoning. Stir to combine.
  • Reduce heat and simmer for 2-3 minutes, stirring occasionally.
  • Meanwhile, warm tortillas in the microwave for 10 seconds. TIP: place a slightly damp paper towel on top of the tortillas to ensure they do not dry out while heating.
  • Place tortillas on a plate. Heat in microwave for 10 seconds to warm. Spread taco meat evenly over each tortilla.
  • Add 1 tbsp of each topping (Greek yogurt, guacamole, pico de gallo, shredded cheese, sliced olives).
  • Fold into a taco and enjoy immediately for best results!
