  • Bananas
  • Almond or cashew butter
  • Greek yogurt
  • Eggs
  • Vanilla extract
  • Maple syrup

  • Collagen peptides (we recommend 1st Phorm Collagen)
  • Baking soda
  • Baking powder
  • Sea salt
  • Blueberries

  • Measuring cups/spoons
  • 2 mixing bowls
  • Spoon or spatula
  • Muffin tin
  • Muffin liners (or spray to spray the muffin tin)

How to Make High-Protein Blueberry Muffins 

  • Preheat oven and prepare muffin tin.
  • Stir together wet ingredients.
  • Stir together dry ingredients.
  • Add dry ingredients to wet ingredients. Stir to combine.
  • Gently mix in blueberries.
  • Pour batter into prepared muffin tin and bake for 22-25 minutes.
  • Cool for 10-15 minutes. Enjoy!

Swaps or Alternatives

  • Banana
    • The banana in this recipe helps to provide natural sweetness. We no don’t recommend swapping or omitting this ingredient.
  • Almond or cashew butter
    • We love almond or cashew butter in this recipe, but any nut butter would be great! Following a nut-free diet? Simply swap with Sunbutter. 
  • Greek yogurt
    • We used Fage 2% in this recipe, but any Greek yogurt would work great! Following a dairy-free diet? Simply swap with a dairy-free yogurt alternative. 
  • Eggs
    • The eggs in this recipe help to bind the product as well as provide an additional source of protein. If you are following an egg-free diet, you can make a flax egg with flaxseed and water.
  • Vanilla extract
    • Vanilla helps to give a boost of flavor to this recipe. We do not recommend you omit this ingredient.
  • Maple syrup
    • The maple syrup helps to add a small amount of sweetness to this recipe. If you prefer a sweeter muffin, add 1-2 more tbsp. If you prefer less sweetness, decrease the amount or fully omit. You can also replace this with honey or another sweetener of your choice.
  • Old fashioned oats
    • The old-fashioned oats in this recipe are blended into an oat flour. If you prefer to skip the step of creating your own oat flour, you can purchase oat flour. If you do not eat oats, you can experiment with using another flour of your choice such as almond flour.
  • Collagen peptides
    • Collagen peptides help to give this recipe an additional boost of protein. If you do not have collagen peptides on hand, you can experiment with using another protein powder, or fully omitting.
  • Baking soda, baking powder, sea salt
    • These ingredients help the muffins to rise. We do not recommend omitting these ingredients.
  • Blueberries
    • The main star of the show! If you’d like to really have fun, feel free to try other fruits of your choice. But trust us, these blueberries will not disappoint!

Equipment

  • 1 Blender
  • Measuring Cups & Spoons
  • 2 Mixing bowls
  • 1 Spoon or spatula
  • 1 Muffin tin
  • Muffin liners (or spray to spray the muffin tin)

Ingredients
  

  • 1 cup blueberries
  • 2 medium ripe bananas, mashed
  • ½ cup almond or cashew butter
  • ¼ cup plain Greek yogurt (I used Fage 2%)
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup
  • 1½ cup old fashioned oats (blended into oat flour)
  • 4 scoops collagen peptides (I used Vital Proteins)
  • ½ tsp baking soda
  • 1 tsp baking powder
  • Pinch of sea salt

Instructions
 

  • Preheat oven to 350F. Line or grease muffin tins with cooking spray.
  • Mash bananas in a large mixing bowl with a fork.
  • Combine bananas, nut butter, Greek yogurt, eggs, vanilla extract, and maple syrup. Stir to combine.
  • To blend oats, add old fashioned oats to blender. Blend until it has a flour consistency, approximately 30 seconds.
  • In a separate bowl, combine blended oats, collagen peptides, baking soda, baking powder, and sea salt. Stir to combine.
  • Add dry ingredients to wet ingredients. Stir to combine. Gently mix in blueberries.
  • Pour batter into prepared muffin tins. Top with additional blueberries, if preferred.
  • Bake for 22-25 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool for 10-15 minutes. Store in the fridge in an airtight container for up to a week or in the freezer for up to 6 months.
  • Serve cold or warm and top with additional nut butter, if desired.
