  • Shredded cheddar cheese: I used sharp cheddar cheese, which adds a cheesy flavor and texture to the pocket. You can use any type of cheese you prefer whether it is pepper jack, feta, or mozzarella.
  • Bacon: This adds a smoky flavor and crunch to the pocket. You can use turkey bacon or omit it for a vegetarian option.
  • Salt and pepper: These are basic seasonings to add flavor to your eggs.

How to Make Breakfast Toaster Pocket

  1. In a mixing bowl, whisk together the eggs, salt, and pepper until well combined.
  2. Heat a small, non-stick skillet over medium heat. Add the egg mixture to the skillet and cook, stirring occasionally, until the eggs are scrambled and cooked through.
  3. In a medium skillet over medium heat, cook the bacon to your preferred level.

  5. Lay 1 piece of bacon on top of the cheese, then spoon the scrambled eggs on the bacon, leaving about a 1/2 inch border around the edges of each tortilla.
  6. Fold the sides of each tortilla towards the center, then fold the sides in towards the center, creating a pocket. Press down gently to flatten the tortilla. 
  7. Place the tortilla pockets in a toaster and cook level 3 for 1-2, or until the tortillas are crispy and the cheese is melted.
  8. Carefully remove the pockets from the toaster and allow them to cool for a minute or two before serving. Enjoy!
